He takes them apart, then puts them together again with his own inimitable twist, so creating a sublime 21st Century take on ancient delicacies.
Today, as an avowed fan of Alice in Wonderland, Heston unveils the inspiration for one of his signature dishes, Mock Turtle Soup. The original recipe for the soup appeared in a cookbook written by the first Professor of Botany at Cambridge University in 1732, but the dish quickly made it into the mainstream and the craze for it lasted well into the Victorian age.

SAT 05:30 Michael Frayn's Matchbox Theatre (b06s1b8t)
Episode 4
Michael Frayn: the most comic philosophical writer of our time. An all-star cast has great fun with his hilarious view of us all. And the ways we attempt to communicate. And explain.
In this final part, we start by taking listeners direct from the Matchbox studio to a report from outside the National Theatre, where some long speeches are going on inside. Our reporter (Martin Jarvis) tells anchor Rosalind Ayres that it seems to be all about Hamlet. A couple (Lisa Dillon and Lloyd Owen), who have just been on a street demo, can't quite cast off their hectoring demeanour when ordering tea and buns. And Tom Hollander at a dinner party embarrasses a fellow guest with some surprisingly anti-social behaviour. A husband (Adam Godley) may have a communication problem. In a bravura solo performance, Julia McKenzie attempts (on the phone) to communicate with the 'sofa disposal' department, but are they actually listening? And language becomes a problem for Ian Ogilvy as a hospital visitor - but who is really speaking gibberish?

Tomorrow's World, Today
Everyone knows the iconic TV series Tomorrow's World - and many of us watched it as it made predictions about the future. Was it correct in its assumptions and predictions? James Burke takes a journey through the archive, and explores the story of the past half century of technological development.
Tomorrow's World began in the "White Heat" of the 1960s - as science and technology began to promise a future previously unimaginable.
From the first orbits of the moon, to the first heart transplant; from the nuclear debates of 20th century, to the economic failure of Concorde; from robots to the internet - Tomorrow's World reported on it all. How did the show do it? And did it get it right?
To mark the programme's 50th Anniversary in 2015, James Burke - a reporter on the show from 1966 to 1972 - looks at how it dealt with the often huge changes that occurred in the time from when it was first broadcast, and assesses what it says about our ability to see what's around the corner.
Featuring Judith Hann, Michael Rodd, Maggie Philbin, Howard Stableford, Michael Blakstad and Dame Wendy Hall.
Producer: Polly Weston.

Every conversation - they're not BBC interviews, and that's an important difference - lasts up to an hour, and is then edited to extract the key moment of connection between the participants. Most of the unedited conversations are being archived by the British Library and used to build up a collection of voices capturing a unique portrait of the UK in the second decade of the millennium. TUE 06:30 The Crying Game (b01qnv2h)
Geoff Watts investigates why we cry and the peculiar purpose of tears.
Although many animal species cry vocally, the production of tears in response to emotion, both happy or sad, is a trait unique to humans. So why do we cry, and what could the evolutionary advantage be to producing tears in response to joy or despair?
The science on this topic has been surprisingly sparse until very recently, but now new research seems to be shedding some light on some common preconceptions about the effect and consequences of our tears. Does having a good cry make you feel better, for example, or do women really cry more than men? Researchers in Israel have even discovered that our tears may contain hidden messages triggering surprising responses in those who come into contact with them.
Geoff Watts gets the tissues ready as he investigates everything you ever wanted to know about weeping.

Mention Milton Jones to most people and the first thing they think is 'Help!'.
King of the one-liners, Milton Jones returns BBC to Radio 4 for an amazing 10th series in a new format where he has decided to set himself up as a man who can help anyone anywhere - whether they need it or not. Because, in his own words, "No problem too problemy".
But each week, Milton and his trusty assistant Anton set out to help people and soon find they're embroiled in a new adventure. So when you're close to the edge, then Milton can give you a push.
This week, a friend who runs a B&B is in trouble - so it's time for Milton to dust off those nylon sheets and let the sparks fly.
Written by Milton with James Cary ("Bluestone 42", "Miranda") and Dan Evans (who co-wrote Milton's Channel 4 show "House Of Rooms") the man they call "Britain's funniest Milton," returns to the radio with a fully-working cast and a shipload of new jokes.

Suspense
Stig Abell, chair of the judges for the BBC National Short Story Award 2018, introduces three tales which share a sense of suspense, something the short story can evoke so brilliantly.
Deborah Findlay voices a magnificent re-telling of Beauty and the Beast in Angela Carter's The Courtship of Mr Lyon, a contemporary take on that classic fairytale.
In Daphne du Maurier's Tame Cat, we hear a rather creepy account of a love triangle involving a young woman, an older man and her mother.

Series 1
Episode 5
Everyone craves a place where their mind and body are not applied to a particular task. The nearest faraway place. Somewhere for drifting and lighting upon strange thoughts which don't have to be shooed into context, but which can be followed like balloons escaping onto the air. Late at night, in the dark and in a bunk bed, your tired mind can wander.
This is the nearest faraway place for Patrick Marber and Peter Curran. Here they endeavour to get the heart of things in an entertainingly vague and indirect way. This is not the place for typical male banter.
From under the bed clothes they play each other music from The Residents and Gerry Rafferty, archive of JG Ballard and Virginia Woolf. Life, death, work and family are their slightly warped conversational currency.
Writers/Performers:
PETER CURRAN is a publisher, writer and documentary maker. A former carpenter, his work ranges from directing films about culture in Africa, America and Brazil to writing and presenting numerous Arts and culture programmes for both radio and television.
PATRICK MARBER co-wrote and performed in On The Hour and Knowing Me, Knowing You..with Alan Partridge. His plays include Dealer's Choice, After Miss Julie, Closer and Don Juan in Soho. Marber also wrote the Oscar-nominated screenplay for the film Notes on a Scandal.
Producer: Peter Curran.

WED 06:30 Letters to the Russian Front (b01l1g5h)
On her mother's death Chris Kelly inherited a collection of more than 500 letters written between members of her father's family during the Second World War. One of them had remained un-opened.
Adolf Winkelbauer had been removed from his post as head of surgery at the General Hospital of Vienna by the Nazis in 1938. He, his aristocratic wife Edina and the family had to adopt a muted existence in Graz. Two of the sons, Leo and Andreas were obliged to join the German army at the outbreak of the war. The sister, Edina, worked as a land girl in Bavaria. Chris' father Rudolf remained in Austria in an air defence unit.
Their mother managed to gather many of the letters they sent to each other during this period. They were written with an awareness of the censorship that was going on, but they still include snatches of the brutality of war. Rudolf, the youngest of the family and aged 17 at the time:
"...I feel very sorry for the poor bastards [Russians], who have a terrible time of it. Often we have to look on as some 16 year old Luftwaffenhelfer gives a Russian prisoner of war a kicking. It is stomach turning stuff, and even at that, it's not as bad as it gets..."
The over-riding emotion is one of loss, particularly of their idyllic childhood. The loss is all the starker given the harshness of their surroundings as they saw the war turning against them.
The programme will hinge on the un-opened letter, sent by Rudolf to his brother Leo in November 1943. He had no way of knowing that Leo was already dead, killed in combat at Melitopol in what is now Ukraine. The letter was sent back to the family home. Rudolf's mother kept it but couldn't face reading it. It was only this year that Chris decided it was time to see what her father, then seventeen years of age, had written to his elder brother.
"Time is running away from us like sand through an hourglass. So fine, that you don't even notice it slipping away, and yet it is always disappearing. Our parents are getting older and are getting grey hair and need our help more and more. In time they will put their destinies, with everything that they have and are, into our own hands. For us to protect. And we will look after them with great joy and pride, because we will want to do for them what they did for us. This is tied to the sorrowful realisation that the beautiful world we inhabited as children is no more.
But one thing we have from this time; the glorious memories of our enchanted youth. No one will be able to rob us of this, even if times become worse than they are now.
Please excuse these ramblings - they are errant thoughts escaped! I was just letting my pen dance across the page, as it wished.
See you soon at Christmas.
Your brother
Rudolf.
Rudolf left for America shortly after the war and trained as a Doctor. However he was over here towards the end of last year visiting his daughter and we were able to record him reading his letter for the first time since he wrote it more than sixty years ago. It's a poignant radio moment.
In the programme we learn more of the characters of the brothers. Andreas was an artist and the leader figure. He, too, died on the Russian front. Leo was ill-equipped for soldiery. Rudolf knew that well enough and his letters were attempts to raise the spirits of his older brother.

FRI 06:30 The Art of Radio Times (b03bfsyw)
Peter Day tells the story of the outstanding British graphic artists who made Radio Times magazine their canvas.
The idea that a broadcasting listings magazine should provide the opportunity for writers and artists to produce some of their finest creative work seems perhaps a little far-fetched in the present era of TV listing magazines and supplements. Yet Radio Times, which first appeared on bookstands on 28th September 1923, was a great nurturer of artistic talent.
It started with cartoons - the early magazine loved a gentle 'Punch'-like joke - but soon Radio Times evolved its own individual graphic idiom, using line drawings and motifs, alongside more conventional photographs, to illustrate the imaginative world of radio, in particular. In the magazine's heyday, an elegant Eric Fraser cover would regularly grace the bumper-selling Christmas edition, and 1953's Coronation Number became a collector's item with Fraser's simple and noble heraldic theme.
Alongside Eric Fraser, amongst the great British artists to create some of their most distinguished work for Radio Times were Edward Ardizzone, Val Biro and Victor Reinganum; Bob Sherriffs contributed thumbnail caricatures in the early years and 50 years later Peter Brookes, before becoming a fixture on The Times was a regular contributor.
In this programme, Peter Day explores the graphic heritage that Radio Times fostered with those who drew and those who commissioned for it.
